6 lbs any pork roast
3 lbs any beef roast
2 Tbsp salt
1 Tbsp pepper
Crushed red peper
Mustard
Worchesetire sauce
Vinager
BBQ sauce
Stick butter

Cut meat into baseball/softball sized pieces
Put meat in large pot and add just enough water to cover
Add salt and pepper, bring to a boil then reduce to simmer for 2 hrs.
Turn off heat and let sit until cool enough to put in refrigerator.
Let sit overnight in fridge.
Take out, skim the fat off the top and put back on the heat. Bring back to a boil, add 4 large chopped onions, add return to simmer.
Simmer until the meat starts getting stringy and start adding the other ingredients to taste.
That is the hard part and none of mine have ever been the same.
After meat is stringy and flavor is good, add some butter and it is ready

On 4 July 2022 made the following batch of hash using above guide
4 lbs of pork
3 lbs of beef
1/2 tsp of crushed red pepper
2/3 cup white boy mustard
1 Tbsp Worcestershire sauce
1/3 rice vinegar
