3 c. cooked chicken, cut up
1 medium onion, chopped
1/2 c. celery chopped
1 c. carrots, sliced
c. potatoes, peeled and diced
1 c. frozen peas (if desired)
1 stick butter
1 1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. poultry seasoning
1/2 c. flour
1 1/2 c. chicken broth
1 c. milk
Pie crust for a 9 inch double crust pie (if frozen use deep dish)
1 egg beaten with 1 T. water (for egg wash)

Directions:
In large saucepan cover carrots, potatoes, and peas with water. Simmer for 10 minutes until partially cooked. Drain and set aside. In a skillet melt 1/2 of the butter. Saute onion and celery in butter until done. Add to other vegetables. Add chicken. In your skillet add remaining butter and melt. Mix in flour and seasonings stirring well. Slowly add chicken broth and milk stirring continually to make a nice white sauce. Cook on medium heat until thickened. Pour over chicken and vegetables. Stir gently. Pour into 9 inch deep dish pie crust. Top with your second crust. Crimp crusts together well. Use a pastry brush and paint the top crust with the egg wash. Place pie on a cookie sheet. Bake at 425º for 30 minutes or until done.
