1 tbsp Olive Oil
6 Medium Yellow Summer Squash sliced thinly
1 Large Onion sliced thinly
1 tbsp Butter
1/2 cp Parmesan Cheese
1 cp Shredded Cheddar
1/2 cp Sour Cream
Salt
Black Pepper
1 sleeve Ritz Crackers crushed fine

Directions:
Directions:
1. Preheat oven to 350
2. Grease casserole dish
3. Heat oil and butter large skillet over medium heat
4. Sautee onions and squash until tender
5. Transfer to bowl and stir in parmesan, cheddar and sour cream
6. Add salt and pepper to taste
7. Place in casserole dish and sprinkle with cracker Crumbs
8. Bake 20 minutes or until top is golden and bubbly
