Olive oil
4 medium zucchini diced
1 large onion diced
4 cloves garlic minced
1 C fresh tomatoes diced
1 bell pepper diced
2 medium white potatoes, diced
15 oz can tomato sauce
1/2 can tomato paste
2 t salt ( I use half Creole seasoning)
2 t pepper
2 T fresh oregano chopped
1/4 C fresh basil chopped
2 bay leaves
4 C chicken broth
Romano cheese

Directions:
Directions:
Coat the bottom of pot with olive oil. Add zucchini, onions, garlic, tomatoes, bell pepper, potatoes and salt/pepper. Cover and simmer for 20 minutes.

Stir in tomato past, tomato sauce, bay leaves, oregano, basil and chicken broth. Cover and simmer 30 minutes.

Serve with Romano Cheese and Bread.
