2 chickens skinned and cleaned
2 tbsp. of yogurt
2 tbsp. of ginger paste
2 tbsp. of garlic paste
3 tsp. of salt
1 tsp of green chutney
1 green chili
3 tbsp. of oil
6 potatoes cut in half
1 tomato chopped
2 tbsp. lemon juice
2 cinnamon sticks
4 cardamom pods
4 cloves
2 onions - chopped
4 peppercorns
1 tsp cumin seeds
1 tsp of garam masala
3 tbsp. of fried onions (home made or store bought)
2½ cups of rice
5 cups of water

1. Marinate the chicken in yogurt, 1 tbsp. of garlic and 1 tbsp. of ginger, 1 tsp of salt, 1 tsp of green chutney and 1 tbsp. of lemon juice for about 30 mins.
2. Soak rice in cool water for about 10 - 15 mins
3 In a large non stick saucepan, heat 3 tbsp. of olive oil and add cinnamon sticks, cloves, cardamom pods, peppercorns and cumin seeds.
4 Sauté the chopped onions, green chili, 1 tbsp. of garlic and 1 tbsp. of ginger and 2 tsp of salt.
5 Add the chopped tomato until the tomato has softened.
6 Add the marinated chicken and cook for about 10 mins until it has cooked a little.
7 Add the potatoes, and 5 cups of water and 1 tbsp. of lemon juice and bring to a boil and cover.
8. Do a taste test for the salt. If it needs more add a little.
9. Once the water has come to a boil, drain the rice in a colander and add to the mixture.
10. Preheat the oven to 325º.
10. Mix the rice so that it does not stick together or to the bottom of the saucepan.
11. Turn down the heat to medium and cover and mix once again.
12. Once the water has evaporated, sprinkle fried onions, garam masala, and 2 tsp of butter or oil and cilantro and place covered in the oven for about 15 - 20 mins. Do not mix the rice.



You can serve the pilau with kachumber and yogurt.

An option is to add a tiny amount of yellow food coloring to 3 tbsp. of warm water with few strands of saffron. Before you add the garam masala, fried onions and oil, pour the yellow coloring mixture in three spots. Do not mix the rice. Now sprinkle garam masala, fried onions and oil. cover and put in the hot oven.
When serving the pilau, mix the rice slowly, Some parts of the rice will be white and some will yellow..
