4 medium sweet potatoes cut into small chunks
1 tablespoon olive oil
1 tablespoon fresh lime juice
1 tablespoon maple syrup
2 T minced garlic
1/2 teaspoon chili powder
Salt and pepper, to taste
1 (15 oz) can black beans, rinsed, drained and patted dry

Salsa:
1 cup fresh diced pineapple
3/4 cup sweet corn, preferably organic (canned is fine)
Sea salt, to taste
Add jalapenos for spice (optional)

Directions:
Directions:
Preheat oven to 400º. Add sweet potato cubes to a large bowl.
In a small bowl, whisk together olive oil, lime juice, maple syrup, garlic and chili powder. Pour over sweet potatoes and toss evenly to distribute. Spread out onto a baking sheet. Roast in oven for 25-35 minutes until sweet potatoes are almost fork tender. Remove from oven, cool for a few minutes then transfer to a large bowl or a serving platter. Toss potatoes with black beans, top with salsa.
While the potatoes are roasting, make salsa: toss pineapple, corn, jalapeno, and salt together.
Serve warm or cold.
