2½ lbs. of extra lean beef cut up in cubes
½ onion chopped
1 tbsp. of ginger
1 tbsp. of garlic
1 tsp salt
2 tbsp. of yogurt
1 chopped tomato
1 tsp. green chili paste
5 black peppercorns
2 tbsp. of lemon juice
1 tbsp. cilantro
4 cups of water

Rice
3 tbsp. olive oil or ghee
1 chopped onion
2 tbsp. golden fried onions (homemade or store bought)
3 cups basmati rice
6 - 7 potatoes - cut in half
2 cinnamon sticks
3 peppercorns
3 cardamom pods
3 cloves
1 tsp of jeera
1 tbsp. garlic paste
1 tbsp. ginger paste
1 whole green chili
1 tbsp. cilantro
1 tomato chopped
1 tsp salt
1 tsp garam masala
1 tbsp. of oil or butter

Directions:
Directions:
1 Boil the meat with all the ingredients under Beef with 4 cups of water in a pressure cooker.
2 When the beef is done, keep on the side.
3. Wash and soak the Basmati rice in cool water for about 10 - 15 mins.
4 In a large non stick saucepan add 3 tbsp. of olive oil, cinnamon sticks, peppercorns, cloves cardamom pods
5. Fry the chopped onion. garlic and ginger. jeera and potatoes.
6. Add only the cooked beef and mix.
6 After adding the meat add 6 cups of liquid left from the meat. If there is not enough you can add hot water to make up the 6 cups.
7. Preheat the oven to 325º.
7. Once mixture comes to a boil, drain the rice and add to the mixture. Using a spoon or ladle, mix only a few times to ensure it does not stick to the bottom. Cover and lower the heat to medium.
8. When the water has evaporated, sprinkle garam masala, fried onions, a tablespoon of oil or butter and 1 tbsp.. of coriander. Do not mix the rice.
9. Place the covered saucepan in the hot oven for about 20 mins.

You can serve the pilau with kachumber and yogurt.

An option is to add a tiny amount of yellow food coloring to 2 tbsp. of warm water with few strands of saffron. Before you add the garam masala, fried onions and oil, pour the yellow coloring mixture in three spots. Do not mix the rice. Now sprinkle garam masala, fried onions and oil and cover and put in the hot oven.
When serving the rice mix gently, Some parts will be white and some will yellow.
