6 c. peeled and diced potatoes (or 1 2 lb. bag of frozen hash browns)
1 onion, diced
2 stalks of celery, chopped
1 large box chicken broth
1 can evaporated milk
1 - 2 c. milk
1 tsp. salt
1/2 tsp. black pepper
6 slices of bacon, fried and crumbled
2 c. shredded cheddar cheese

Directions:
Directions:
Place potatoes, onions, and celery in a large pot. Cover with chicken broth. Add additional water if needed to completely cover the vegetables. Simmer for 20 minutes or until the potatoes are tender. Take a potato masher and mash up potatoes in the pan. Add evaporated milk, salt and pepper. Add additional milk as needed for right consistency. You can use an immersion blender if you like. Ladle into bowls. Top with crumbled bacon and shredded cheese.
