2 lb small Mississippi-farmed catfish fillets
Generous amount of Tabasco sauce
Salt and pepper to taste
Yellow cornmeal
Shortening

Directions:
Directions:
Wash and dry fillets with paper towel. Cut into bite size pieces and place in a bowl. Add Tabasco to coat pieces, stirring. In a large pan, combine cornmeal with salt and pepper, to taste. Dredge fish in the cornmeal until evenly coated. Fry in deep fat at 380 degrees until brown (about 3 minutes, when the pieces float to the top). Drain on paper towel and serve with cocktail sauce, with toothpicks. NOTE: Gray Evans, my wonderful uncle, was a Senior Judge in the MS Fourth Circuit Court District. He wrote a cookbook of his favorite recipes.
