Marinate Chicken
2 boneless chicken breasts cut up into thin long strips
1 tbsp. ginger paste
1 tbsp. garlic paste
1 tbsp. chili paste
1 egg
1 tsp salt
1 tsp paprika
2 tbsp. dark soy sauce
1 tbsp. corn starch
1 tsp of white flour
1 tsp of black pepper

Vegetables
1 green pepper sliced
1 red pepper sliced
1 orange pepper sliced
1 yellow pepper sliced
1 bunch of green onions chopped

Sauce
Cashews
½ cup of cashews
2 cloves of garlic chopped
1 tsp of fresh chopped ginger
2 tbsp. of tomato sauce
1 tsp salt
1 tbsp. of soya sauce
1 tbsp. of chili paste
1 tbsp. vinegar
2 tbsp. chicken stock
1 tsp. of corn starch
1 tsp of chopped cilantro
1 red dried chili (optional)

Chicken
1.Mix all the ingredients and marinate the chicken for 30 minutes.
2. Deep fry the chicken strips in a wok or karahi until they are crispy golden brown.
3. Remove the chicken with a skimmer and keep on the side.

Prepare the Sauce
1. Add 2 tbsp. of oil in a wok or deep frying pan.
2. Fry the cashews about 1 - 2 mins
3. Next comes the chopped garlic, ginger and dried chili. (optional)
4. Add the white part of the green onions and cook.
5. Add all the peppers.
5. Add chili paste, soya sauce, vinegar and tomato sauce.
6. Mix corn starch with the chicken stock and add to the mixture
7 Cook the cornstarch for about 1 min and it will start to thicken.
8 Add the fried chicken and let it absorb the sauces on low heat.

Plate the dish and garnish with cilantro and chopped onions.
Serve with rice or noodles
