2 Medium Zucchini
1 pkg. frozen blend veggies
Cooking Spray
1 lb. ground beef
¾ Cup fresh salsa
1 (1 oz.) pkg. reduced sodium taco seasoning
½ Cup Sour Cream (optional)
2 Cups shredded lettuce
1 Cup cheese
3 Tbsp. ranch dressing

Directions:
Directions:
Preheat oven to 400º
Microwave Veggies according to pkg.
Cut Zucchini in half lengthwise, scoop out seeds & pulp leaving 1/4 inch thick shell. Save pulp.
Coat 9" square baking pan with spray. Put Zucchini Boat cut side up in pan & set aside.
In saute pan brown meat, chopped Zucchini, Salsa & Seasoning. Mix in sour cream.
Fill Zucchini Boats with meat mixture (sprinkle remaining meat mix around boats). Cover & bake
30 minutes or untilboats are fork tender. Toss Lettuce & Ranch dressing; top boats with lettuce mix.
