Ingredients: 1 (16oz) package spaghetti 1 pound lean ground beef (or an Italian sausage, ground beef combination) 1 Tbsp black pepper Salt to taste 1 (16oz) jar of your favorite pasta sauce. 1/2 stick butter, cut into chunks. 1 cup whole milk cottage cheese 1 (8oz) package cream cheese, softened - not light or fat free 1/2 cup sour cream 2 Tbsp olive oil 1/2 large onion, diced 3 cloves of fresh garlic, minced 1/2 tsp fresh parsley, chopped 1 (8oz) package of mozzarella cheese 1/4 cup freshly grated Parmesan cheese 1 (8oz) package shredded Cheddar cheese

Directions:Preheat the oven to 350F. Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Drain. Place the drained spaghetti into a bowl. Add chunks of butter, mix well until spaghetti is nicely coated. Set aside. In a large skillet heat your olive oil over medium-high heat. Add your diced o ion. When onionis just starting to become translucent, add your garlic and pepper. Cook 3 minutes more, stirring often. Now add the ground beef and cook until the beef is brown. Drain the beef mixture. Put the beef back into the skillet and add your pasta sauce and parsley. Stir. Keep on a very low, gentle simmer. Stir often. In a large mixing bowl combine the cream cheese, sour cream and cottage cheese - well blended. Add your spaghetti into the sour cream mixture. Toss until pasta is fully coated. In a 9X13 inch casserole dish, pour creamy spaghetti mixture in and top with 3/4 of the meaty pasta sauce. Toss well. Add half the cheddar and half mozzarella - once again. Toss well. Add the remaining pasta sauce over the top. This time DON’T toss! Evenly top with all remaining cheeses, again DON’T toss. Bake at 350F for 25 minutes. All cheeses should be melted. Allow to cool a bit, but serve hot.

Notes: One of those over the top recipes I got from a other parent at Waldorf. Kids loved this one. The name says it all - lasagna meets spaghetti.
