Ingredients: 1 cup raw cashews soaked overnight 4 cups water plus 1 vegan massel chicken style bouillon
3 tbsp flour 3 tsp vegan butter 4 cloves garlic minced 1 tsp salt 1 tbsp nutritional yeast 7 yellow potatoes peeled and thinly sliced 1 cup panko bread crumbs plus a couple dollops of veg butter 1/2 tsp paprika cracked pepper dash 2 tbsp fresh chopped thyme

Directions: Preheat oven to 375.Blend the cashews water. and bouillon in high speed blender till smooth. set aside. In fry pan melt the butter add the flour and the garlic cloves .Cook on med heat until garlic is tender.Add the cashew mixture to the pan along with the salt and yeast. Cook on low heat just until thickened.Butter a large casserole dish.Add a layer of the potatoes than top with sauce.Repeat with more layers till sauce and potatoes are gone.Top with panko, veg butter, paprika, fresh thyme and cracked pepper.Cover with foil and bake for 45 min.Remove foil and bake a additional 15 min. |
