Greek Salad ingredients:
1 large bunch (about 10 oz) kale leaves, chopped
1 pint cherry or grape tomatoes, halved
1 english cucumber, diced
1 (15 oz) can garbanzo beans (chick peas), rinsed and drained
½ red onion, thinly sliced
⅔ cup kalamata olives, pitted (I put in more)
⅔ cup crumbled feta cheese (I put in more)
Garlic parsley vinaigrette (see below)

Garlic Parsley Vinaigrette ingredients:
½ cup olive oil
¼ cup fresh parsley, finely chopped (when I don’t have fresh on hand I use dried, about ⅛ of cup)
3 tbsp freshly squeezed lemon juice
3 tbsp white balsamic vinegar
2 garlic cloves, pressed (or finely chopped)
1 tsp dried oregano
¼ tsp salt
¼ tsp black pepper

To make Greek Salad:
Toss all ingredients together with desired amount of dressing until evenly mixed.

To make vinaigrette:
Whisk all ingredients together until blended.

I had gone to a Woman of Faith conference one year in Connecticut and we ate at this little bistro where I tried my first kale salad. I loved it so much that I was bound and determined to come home and duplicate it. So with the help of Pinterest I made a kale salad. But everyone I tried just wasn’t the same so with lots of trial & error putting my own spin on things this is the recipe I have put together from mixing different ones together and it tastes just like the Connecticut bistro! I hope you enjoy!! :)
