Mashed potatoes – enough to line dish
1 egg white
2 dozen oysters (raw)
1/2 pt (2 c) milk
1 T butter (salted)
Pepper and salt to taste
1 (heaping) tsp flour

Directions:
Directions:
For a delicious oyster pie, line a vegetable dish with mashed potatoes. Brush it over with the white of an egg and put it into the oven to brown lightly. Take two dozen oysters, half a pint of milk, one tablespoon of butter, pepper and salt to taste. Let come to a boil (in a large saucepan on medium heat), and thicken with a heaping teaspoonful of flour and put into the space left in the vegetable dish.
