10 chicken breasts
Shortening (I use Crisco)
1-1/2 lb cured (baked, sliced) ham
1/2 c chopped celery
1/2 c chopped white or yellow onion
2 T minced green bell pepper
2 T stuffed green olives, minced
1 c rice
Large (28-oz) can whole tomatoes

Directions:
Brown chicken lightly in Crisco. Dice ham and dry lightly. Place ham and chicken in casserole or Dutch oven. Sprinkle celery, onion, green pepper and olives all over this. Add raw rice, rinsed, on top; cover with can of tomatoes. This should be enough moisture but may add water if seems dry. Cover and cook in moderate oven (325-350˚F) about 1 hour — until chicken is ready to fall from bone. Serve with green salad, rolls or French bread.
