1/4 c shortening
1 tsp salt
1 c condensed or sweet (whole) milk
1 yeast cake (equivalent to one 1/4 oz packet dry yeast)
1/2 c sugar
1 c boiling water
7-1/2 c flour
2 eggs
(Confectioners sugar)

Directions:
Directions:
Pour boiling water over shortening, sugar and salt. Add milk. Cool to lukewarm (110-115˚F) and add yeast that has been dissolved in 1/4 cup lukewarm water. Add beaten eggs and stir in 4 cups flour. Beat hard. Add enough flour to make a soft dough. Place in greased bowl and cream top of dough. Cover with slightly damp cloth and keep in refrigerator until ready for use. (Much better to let stand at least one day.) Roll dough on floured board to 1/4-inch thickness. Cut with knife into strips and fry in very hot deep fat (about one quart of vegetable oil such as canola). Do not let dough rise before frying. Drain on paper towel. Dust with powdered sugar and serve immediately with coffee or tea.
NOTE: The term "Cream" instructs the baker to work milk into the hot shortening, sugar and salt mixture, and cool down to lukewarm before adding the dissolved yeast mixture and beaten eggs.

Old French Market Doughnuts are beignets. They are similar to what the Mississippi Band of Choctaws call Choctaw Fry Bread, but with the French addition of eggs and milk. The Choctaw fought alongside the French and Americans against the British in New Orleans.
