1 c uncooked long grain or whole grain rice
1 onion, chopped
1 10 oz package mixed vegetables
1 14.5 oz can chicken broth
2 t garlic salt
4 chicken breast halves
1 t paprika
1 t dried thyme
2 c shredded cheese

Directions:
Directions:
Preheat oven to 375º. Combine rice, onion, veggies, chicken broth and 1 t garlic salt in 9 X 13 inch glass baking dish that has been sprayed with nonstick cooking spray. Mix well. Place chicken breasts over rice mixture then sprinkle with paprika, thyme and remaining garlic salt. Cover tightly with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until liquid is absorbed and chicken is cooked through. Top with shredded cheese and bake for 5 minutes or until cheese is melted.
