5 Lbs Potatoes
8 Oz Cream Cheese
1 Stick Butter
1 Cup Sour Cream
1/2 Cup Chopped Chives of the green part of a green onion.
Salt and White Pepper (black works just fine) to taste

Directions:
Directions:
Peel and dice potatoes and boil in salted water until soft but not mushy. Drain well, return to pot and mash roughly.
Keep on mashing as you add the cream cheese, butter and sour cream; mix until smooth.
Season with salt and pepper; fold in chives.
Cover and refrigerate until needed.
Reheat about 45 minutes in a preheated 350 degree oven or until hot all the way through.

These are perfect for a holiday dinner. Saves a lot of time when your cooking so many other things.

A little tweak that Adam told me....use a flavored cream cheese such as garden vegetable. This takes them over the top. If you do this, you can omit the chives.
