Stuffed Bell Peppers Recipe

4 large green bell peppers
1 c. cooked rice
1 lb. ground beef
2 garlic cloves (minced)
½ c. chopped onion
1 28 oz. can diced tomatoes (seasoned)
Tomato sauce - enough to cover bottom of casserole dish
Salt and pepper to taste

Preheat oven to 400º

Cut bell peppers in half lengthwise; discard seeds and membranes.
Place peppers in casserole dish - bottom of dish should have thin layer of tomato sauce.
In a pan cook ground beef, onions and minced garlic; drain.

In a large bowl combine the cooked ground beef mixture, cooled rice and diced tomatoes.
Add salt and pepper (and other seasonings, if so desired) to taste.
Scoop mixture into each bell pepper half.

Bake covered for 30 min.
If desired, uncover after 30 min., sprinkle mozzarella cheese on top, and bake an additional 5 min.
