3 tbsp. rice vinegar
1 tbsp. olive oil
1 tsp. honey
2 med. cucumbers
4 med. tomatoes (cut into ½ inch wedges)
½ sweet onion (very thinly sliced)
2 tbsp. chopped fresh herbs (what’s your fancy)
salt and pepper to taste

Directions:
Directions:
Whisk vinegar, oil, honey, salt and pepper in large shallow bowl.

Remove alternating stripes of peel from cucumbers.
Slice in thin rounds.
Add sliced cucumber, tomato and onion to the dressing.
Gently toss to combine.
Let marinate if desired.

Just before serving, add herbs and toss again.
