2/3 c. flour
1 tsp. baking powder
1/2 tsp. salt
4 eggs (separated)
3/4 c. sugar
2 T. water
1 tsp. vanilla
2 c. sliced strawberries (set aside a couple of strawberries to top with)
1 small carton heavy whipping cream
1 T. sugar
Powdered sugar (approx. 2 cups)

In a mixing bowl, sift flour, baking powder and salt. In a separate bowl beat egg yolks together for (3-5 minutes) until thick. Slowly add 1/2 c. sugar until blended. Add water and vanilla. Slowly add in dry ingredients. In a separate bowl beat egg whites until soft peaks form. Gradually add in 1/4 c. sugar. Whip until stiff. Gently fold egg whites into batter. Line a jelly roll pan (cookie sheet with edges) with foil. Pour in batter. Bake in a 350º oven for 12-15 minuted until done. While cake is baking lay out a couple of layers of paper towels that cake can be cooled on. Cover paper towels generously with powdered sugar. Remove the cake from the oven and invert onto paper towels with powdered sugar. Peel off the foil. Roll up with the towels and allow to cool. The cake should then roll up well after it is filled. Beat whipping cream with vanilla until peaks form. Take 1/3 of the whipping cream and stir in strawberries. Unroll cake and cover with strawberry mixture. Roll back up and place it (seam side down) on the plate or platter that you will be serving on. Ice with remaining whipping cream. Decorate with strawberries as desired.
