Ingredients: 3 c cooked, chopped chicken breasts 2 Granny Smith apples, peeled and cubed 4 green onions minced 1/2 c sliced black olives 1/2 c mayonnaise 9-oz pkg cheese stuffed tortellini 9-oz pkg fresh (washed) baby spinach 1/2 c sunflower seeds, plus more for garnish 8-oz bottle of Italian salad dressing Garlic pepper and salt, to taste

Directions:In a large mixing bowl, toss cooked chicken, apples, green onions, and olives with mayonnaise to coat; refrigerate, covered, overnight. Cook cheese tortellini according to package directions — don’t overcook. Before serving, combine tortellini with chicken mixture, add spinach and sunflower seeds and toss with Italian Salad Dressing. Sprinkle with additional sunflower seeds and a dusting of garlic pepper for garnish. HINT: Pre-cook the tortellini al dente and drain well, then toss with a little Italian dressing and bag in a ziplock bag until ready to complete the salad. |

Directions: |
Directions:Prepare mayo mixture (omit chicken) and refrigerate overnight. Just before serving, prepare tortellini. Combine with spinach, sunflower seeds and Italian dressing; fold into mayo mixture. Toss with the shrimp. |
