Pork Medallions


Ingredients:

2 T vegetable oil
1/2 tsp salt
2 T coarse-grained mustard (I use Zatarains)
1/2 tsp coarsely ground black pepper
1/4 c dry white wine
1-1/2 lb pork tenderloin

Directions:
Directions:
Stir together first four ingredients and rub on tenderloin. Chill 8 hours in resealable bag (I use Ziplock). To cook, place pork on lightly greased shallow roasting pan. Bake at 450˚F in preheated oven for 15 minutes. Reduce temperature to 400 and bake 15 minutes, basting with wine every 10 minutes. Meat should register 160˚F when done. Slice and serve with sauce.
 

Mustard Sauce:


Ingredients:  
Ingredients:  
1-3/4 c whipping cream
1/4 tsp salt
1/4 c coarse grained mustard
1/8 tsp ground black pepper

Simmer whipping cream and mustard in small saucepan on medium heat until reduced to 1-1/4 cups, about 20 minutes. Do not boil. Whisk in seasonings, cook one minute. Serve hot drizzled over sliced medallions.
