Ingredients: 12 T. Hotel brand unsalted butter 1.5 c. Pillsbury all-purpose flour 2 qt. whole milk, hot but not scalded 3 tsp. Morton salt 6 large eggs one fourth tsp.nutmeg

Directions:ēMelt the butter in a large saucepan. Whisk in the flour gradually and stir for one minute to remove the floury taste. Slowly add hot milk and whisk until thick. Add seasoning and remove from stove. Temper the eggs by slowly whisking a ladleful of mixture into them to bring the eggs up to temperature. Now you can whisk the rest of the eggs into the mixture. Set aside. |

Ingredients: 2 sticks unsalted Hotel brand butter ( 0ne for onions and one for pasta) 2 large yellow onions, chopped fine 4 pounds 90% lean ground beef one quarter tsp. cinnamon salt and pepper to taste 1 cup of water small can tomato paste 2 lbs. ziti pasta 6 large eggs, beaten 3 tsp. salt 24 - 32 oz. Kasseri or Kefalotiri Cheese, grated (or Parmesan, freshly grated) 8 aluminum foil lasagna dishes (Double for strength) Sprayed with non-stick spray.

Directions:Cook ziti until al dente. Place pasta back in pot and add 1 stick of butter. Let pasta get to room temperature and stir in beaten eggs and salt. Set aside.
Break up beef with a spatula or Pampered Chef Mix N Chop and brown. Drain beef in colander. Brown onions in melted butter in the same pan until soft and golden. Add cinnamon, salt, pepper, water and tomato paste, and simmer for twenty minutes.
Preheat oven to 350 degrees. Layer pasta mixture into pans to two inches. Sprinkle with cheese. Spoon on two inches of meat mixture and sprinkle on cheese. Top with bechamel sauce about one and a half inches. Bake 45 until golden and bubbly. Rest for at least 20 minutes before serving or cool and reheat the next day.
