5 small size cucumbers, skinned and sliced thin
1 medium size red onion cut in half and sliced thin
3 small tomatoes cut into small pieces
1 c. apple cider vinegar
1/3 c. sugar
1/2 c. water
1 tsp salt
pepper to taste

Directions:
Directions:
Put cucumber slices, onion slices and tomato pieces in a storage bag. Mix rest of ingredients until sugar dissolves. Pour over vegetables in storage bag. Refrigerate at least 20 minutes. More is fine. Pour off most of liquid before serving.
