1 lb. dried elbow macaroni
½ Cup unsalted Butter (1 stick)
½ Cup all purpose Flour
1½ Cups Whole Milk
2½ Cups Half & Half
4 Cups Grated medium sharp cheddar Cheese (Or use half Velvetta & half sharp cheddar)
2 Cups Gruyere Cheese grated & divided
½ Tbsp. Salt & Pepper
¼ tsp. paprika

1. Preheat Oven to 325º & grease a 3 Qt. baking dish (9 x 13"). Set aside
2. Bring a large pot of salted water to a boil. Cook Pasta for (7 minutes)
Drain in Colander & drizzle with a Olive Oil to keep pasta from sticking.
3. Grate Cheeses. Save 3 cups for sauce, 1½ cups for layers & for topping.
4. Melt Butter in large saucepan over Med. heat. Sprinkle Flour & whisk to combine. Cook 1 min.. Add 2 cups milk or half & half. Whisk until smooth. Pour in remaining milk or half & half & stir til smooth.
5. Continue to cook over Med. heat, whisk until thickened.
6. Stir in Salt, Pepper & Paprika & cheese for sauce. Cook until Cheese is melted.
7. Add Macaroni & combine.
8. Pour into large baking dish. Top with shredded Cheese
9. Bake for 30 minutes or until cheese is bubbly & lightly browned.
