3 medium sized potatoes

½ medium onion

2 eggs

4 tbs. vegetable oil

½ teaspoon salt

½ teaspoon black pepper

Directions:
1. Peel the potatoes and grate them as finely as possible, into a mash. Drain off the resulting water that will emerge from the potatoes.
2. Peel and grate the onion into a mash as well. Again, drain off any water.
3. Combine the grated potato and onion. Again, drain off any water.
4. Beat the eggs into the potato onion mixture.
5. Add the salt and pepper.
6. In a large frying pan, heat the oil over high heat.
7. Once the oil is hot, almost smoking, add the pancake batter in tablespoon sized portions. Flatten the batter into thin pancakes. Be careful, because any water remaining in the batter will spatter. Pan fry the pancakes until they start to brown around the edges.
8. Once the pancakes are golden brown on one side, flip them until the second side is the similarly browned.
9. After the pancakes are done, nice and crispy brown, drain them in layers on paper towels.
10. Add more oil to the pan, if necessary, to keep plenty of oil in the pan to brown subsequent batches of pancakes. The oil has to be hot.
11. Salt and pepper to taste. Serve with sour cream and apple sauce.
