2 lbs fresh green beans
1 small onion finely chopped
1 garlic clove finely chopped
1/3 cup of parmesan cheese
6 tablespoons of olive oil
2 tablespoons white wine vinegar
1 teaspoon salt
1/4 teaspoon salt
Directions:
Directions:
Wash and trim green beans. Leave whole and cook in boiling water until tender and crispy, not mushy. Drain and cool.

in an airtight container, add onion, garlic, olive oil, white wine vinegar, salt, and pepper—close lid and shake.

When beans are cool, add them to the dressing.

Top with the parmesan cheese.

Cover and refrigerate for 8 hours.

It can be served at room temperature with tomato wedges and ripe olives.

Mom always made this in the summer. When I came over, it is natural for me to look in the refrigerator. I would eat these up, leaving just enough for Mom and Dad's dinner. She would be so frustrated with me. That she would double the batch and then call me over or make me some and drop them off. She was great about that.
