2 packages dry yeast
2 c warm water
1/4 c sugar
1 T salt
1/2 c butter - softened
7 1/2 to 7 3/4 flour
2 T melted butter

Directions:
Prepare two servings of mashed potatoes as the package label indicates, omitting butter and seasonings.

Sprinkle yeast over warm water in a large bowl and stir until dissolved. Stir in sugar and salt until dissolved. Add Mashed potatoes, softened butter, and 3 1/2 cups of flour. Using an electric mixer at medium speed, beat, until smooth, about 2 minutes. Gradually add 4 cups more flour, mixing by hand until dough is still enough to leave the sides of the bowl. Mix in the remaining cup of flour, if needed.

Turn out dough on a light flour surface. Knead the dough for 8 to 10 minutes until smooth and elastic, and small blisters appear on the surface—place in a greased bowl. Turn dough in bowl, bringing greased side up. Cover and let rise in a warm place until doubled in size. It will take about an hour.

Punch down. Divide in half. Roll out one half into a 16 x 8-inch rectangle. Roll up along the narrow side. Pinch edges to seal. Place seam side down into greased 9 x 5 loaf pan. Brush the surface lightly with butter.
Let rise and nearly double again. Bake at 350 degrees for 30 to 40 minutes or until the crust is golden brown. Remove from pan and top with remaining butter.
