3 cups flour
2 tsps baking powder
1 tsp salt
1 cup shortening
4 cups powdered sugar
1 tsp almond or vanilla extract
4 eggs
1 cup milk
1/2 cup walnuts or almonds, ground or chopped
1 cup maraschino cherries, chopped fine

Sift together flour, baking powder and salt, set aside
Cream shortening; add confectioner's sugar gradually, beat well. Blend in extract. Add eggs, one at a time, beat for 1 minute after each addition. Alternate milk and dry ingredients, ending with dry ingredients, using low speed on the mixer. Fold in nuts and cherries. Pour into well greased 10" tube pan (angel food cake pan). Bake at 350º for 60-65 minutes. Run a sharp knife around the edge if needed to release the cake. Allow to cool completely. Sprinkle top with confectioner's sugar.
