3 cups grated carrots
1 cup oil
2 cups sugar
4 eggs
2 tsp baking soda
2 cups flour
2 tsp cinnamon
1/2 cup chopped nuts
1/2 cup raisins

Directions:
Directions:
in a large bowl, combine oil, sugar, eggs, baking soda, flour and cinnamon. Beat for 1-1/2 minutes. Fold in carrots, nuts and raisins. Bake in a greased and floured 13X9 inch pan fo 1 hour at 300º. Frost with Cream Cheese Frosting:

4 cups confectioners sugar
1 8 ounce package cream cheese, softened
1 tbsp milk
1 tsp vanilla
