¼ green pepper
¼ red pepper
¼ yellow pepper
¼ orange pepper
1 cup of red cabbage - shredded
1 cup of green cabbage - shredded
1 cup carrots cut up in julienne style
1 packet of noodles
1 bunch of spring onions -chopped
3 cloves of garlic -chopped
½ cup of bean sprouts
1 tbsp. vinegar
1 tbsp. of fresh ginger - chopped
1 tbsp. of roasted sesame seeds (optional)
2 tbsp. of dark soya sauce
1 tbsp. of Chinese chili sauce
3 tbsp. of olive oil
1 tbsp. of sesame seed oil
1 tbsp. of cilantro

Directions:
Directions:
1. Boil the noodles as per the instructions on the package.
2. When the noodles are cooked, drain them in a colander and run cold water through them. Add 1 tbsp. of olive oil and mix to prevent sticking.
3. In a wok add 2 tbsp. of olive oil and chopped ginger and garlic.
4. Cook for about 1 min until the garlic starts to turn golden brown
5. Add all the vegetables except bean sprouts and half the spring onions ( greens)
6 Cook for about 3 mins and add dark soya sauce, chili sauce and vinegar.
7. Next add the sesame seed oil and ½ tbsp. of cilantro.
8 Add the bean sprouts an mix.
9. Add the noodles and mix with the sauces well
10. Take off the heat and serve.
11. Garnish with spring onions and cilantro and top it up with roasted sesame seeds.
