2 bunches of fresh spinach
½ packet of frozen drumsticks (Indian vegetable)
1 tomato chopped
4 tbsp. desiccated coconut
1 onion chopped
2 tbsp. olive oil
1 tsp. turmeric
1 tsp. coriander and cumin powder
1 tsp. garlic paste
1 tsp. ginger paste
1 tsp salt
½ tsp of green chili paste
¼ tsp of mustard seeds
5-6 curry leaves
1 whole green chili
½ cup of cluster beans (guvar)
½ cup of pigeon peas
1 tsp of fresh chopped methi or fenugreek leaves
½ cup peas frozen
8 baby potatoes - unpeeled
½ bunch of cilantro - chopped

Directions:
Directions:
1. Wash, cut off the stems, and chop spinach.
2. Boil or steam the drumsticks and cluster beans until they are half cooked.
2. In a saucepan, on medium high heat, add olive oil, mustard seeds, green chili and curry leaves.
3. When the mustard seeds start popping, add onions and when the onions start turning translucent, add the potatoes and desiccated coconut..
4. Stir for about 5 mins and add the tomatoes, garlic and ginger paste, salt, and green chutney.
5. Add coriander and cumin powder, turmeric and methi leaves.
6. Add the peas and let it cook for about.
7 Add the drumsticks and cluster beans.
8. Next add ½ the cilantro leaves and let it simmer for about 10 mins or until all the vegetable are cooked.

Serve with Roti or Naan.
