2 tablespoons olive oil or vegetable oil
3½ pound chuck roast beef
2 teaspoons salt
2 teaspoons black pepper
1½ teaspoons garlic powder
1 14-ounce can of chicken broth
1 14-ounce can of beef broth
1 cup water

Directions:
Directions:
Pour oil in a non-stick skillet over medium-high heat.

Sprinkle half of the salt, pepper and garlic powder on one side of roast.

Place seasoned side down in the pan and sprinkle remaining salt, pepper and garlic powder on the top.

Brown both sides of the roast for 4 to 5 minutes on each side.

Remove roast from skillet and place in dutch oven or in 9x13 metal cake pan.

Pour chicken and beef broth in skillet and scrape browned roast bits from pan.

When liquid simmers, remove from heat and pour over roast. Add enough water so that liquid comes halfway up the sides of the roast.

Cover tightly with foil and, if using a dutch oven, place lid on top of foil.

Bake in 300 degree oven.

Turn roast every 30 minutes until fully tender and meat fork or sharp knife easily slips in and out of the meat; about 3½ to 4 hours.

When cooking is completed, remove roast from oven and put on serving plate.
