Ingredients: Marinade 1 cup pineapple juice ½ cup soy sauce 2 large fresh squeezed limes ¼ cup fresh cilantro 1 jalapeno ⅓ cup onions ⅓ cup water ½ tablespoon cumin 1 tablespoon kosher salt ½ tablespoon black pepper 2-3 pounds of skirt steak
Grilled Onions 1 large onion, sliced 1-2 fresh jalapeño peppers, sliced ½ cup butter ½ teaspoon ground cumin ½ teaspoon garlic salt ½ teaspoon paprika ¼ teaspoon chili powder ¼ teaspoon black pepper
Toppings: sour cream, guacamole and grated cheddar cheese

Directions:Marinade: Combine all ingredients and pour into a large ziplock bag. Add skirt steak and marinate over night. Be certain that marinade covers the entire skirt steak.
Remove steak from marinade and grill.
Grilled Onions: Sauté onion and jalapeño in butter and seasonings until onions are browned.
Adjust seasonings amounts as desired.
Remove from pan and serve with fajitas.
Serve with warm flour tortillas, sour cream, guacamole and grated cheddar cheese.
Melted butter may also be poured over fajitas just before serving. |
