1 pound Andouille or cajun-style sausage
4 skinned and boned chicken breast halves
2 Tablespoons peanut oil
1 cup chopped cooked ham
2 teaspoons Cajun seasoning
1 large onion, chopped
1 medium green pepper, chopped
1/2 cup chopped celery
3 cloves minced garlic
1 can Cajun-style stewed tomatoes (14 1/2 oz)
1/2 cup chicken broth
1 Tablespoon Worcestershire sauce
1/2 teaspoon hot sauce
3 cups hot cooked rice
1 cup chopped green onions

Directions:
Directions:
Cut sausage and chicken into half-inch slices or pieces.
Cook sausage and chicken in oil in a large Dutch oven over medium high heat until browned,
Stir in ham and heat it thoroughly. Remove the meat mixture, leaving 1 Tbs. drippings in the pot.
Return the meat. Add the Cajun seasoning and the next 5 ingredients. Cook 5 minutes, stirring.
Stir in chicken broth and remaining ingredients. Heat all thoroughly, stirring.
