1 pound lean ground beef
1 medium chopped onion
2 cloves minced garlic
2 7 1/2 ounce cans tomato sauce
2 3 1/2 ounce cans tomato paste
2 7 1/2 ounce cans diced tomatoes
1 3 1/2 ounce can diced chilis
1 1/2 bottles dark beer
1 teaspoon cumin
1 teaspoon paprika
2 teaspoons chili powder
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Worcestershire sauce
2 14 ounce cans chili beans (red kidney)

1 Saute meat, onions and garlic until done.
2 Add remaining ingredients and simmer for 2 hours.
3 The beer is optional but does add a good flavor and, of course, the alcohol is cooked out during cooking.
For fellowship events I double the recipe, and never have any leftover to bring home. This chili has enough heat to provide a little kick but not enough to set your mouth on fire.
