2 pounds yellow squash, sliced
1 large onion, grated
1 cup bread crumbs
2 eggs
2 teaspoon salt
1 teaspoon black pepper
1 cup grated cheese
1 cup cornmeal

The instructions are not included.

What I suppose is that you combine all the ingredients except the cornmeal. Form the mixture into smallisih balls. Roll them in the cornmeal. Deep fry or pan fry in hot oil in a deep skillet until nicely browned, and enjoy.

I suspect you could use crushed stuffing mix in place of the bread crumbs for seasoned croquettes or add some sage on your own.
