2 cups flour
1 tsp. baking powder
1 tsp. baking soda
4 ripe bananas
½ tsp. salt
½ cup of unsalted butter at room temp
½ cup of white sugar
½ cup of brown sugar
2 eggs
2 tsp vanilla essence
½ cup walnuts
¼ cup raisins
¼ tsp of cinnamon

1. Preheat the oven to 350º
2. Grease and flour a 9" X 5" loaf pan.
3. Cream butter and sugar using an electric mixer until it is fluffy.
4. Add eggs one at a time and continue to beat.
5. Mix the dry ingredients, flour, salt, baking powder and baking soda in another bowl.
6. Add the dry ingredients to the mixture slowly using a spoon.
7 Peel and mash the bananas with a fork and add to the mixture.
8. Next add ¼ cup of the walnuts, raisins and cinnamon..
9. Pour the mixture into the pan and sprinkle the leftover walnuts on top.
10. Bake for 1 hour and 15 mins. However after 1 hour, check the middle of the bread to see if it is done by inserting a toothpick.
11. If the toothpick is clean the banana bread is done.
12 Take it out of the oven and let it rest for at 15 min before taking it out of the pan.

Enjoy with a cup of tea or coffee.
