½ c. freshly grated Parmesan
3 cloves garlic, chopped
1 T. Dijon mustard
2 T. cider vinegar
¼ c. plus 2 T. lemon juice
2 t. anchovy paste (optional)
1 to 1-½ c. extra-virgin olive oil
Salt & freshly ground pepper to taste

Directions:
Combine all but salt & pepper in food processor, blender or jar. Season. Refrigerate for up to 5 days in a covered container.
