1-2 Tablespoons olive oil
4 Chicken thighs or smallish breast halves, skin-on and bone-in
2 cloves minced garlic
1 Tablespoon fresh thyme or half as much dried
1 teaspoon crushed red pepper flakes
1 cup chicken stock
½ cup sun-dried tomatoes
½ cup heavy cream
¼ cup grated Parmesan cheese
Salt and black pepper
Fresh basil for serving

Season the chicken pieces with salt and pepper. In a deep skillet or Dutch oven, brown the chicken on all sides in the oil. Remove it to a plate.
Sprinkle the garlic, thyme, and pepper flakes into the skillet and let them simmer to become fragrant, about 1 minute.
Stir in the chicken stock, the cream, the sun-dried tomatoes, and the Parmesan cheese. Return the chicken to the pan and cover it.
To finish the chicken, either bake at 350 degrees for 15 minutes or until done and tender, or allow to simmer atop the stove for 15-20 minutes. Spoon the gravy on generously, sprinkle chopped fresh basil on each, and serve.
