2 cups almond flour
1/2 cup tapioca or arrowroot powder
1/2 tsp salt
1/2 tsp psyllium husks
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp all spice
1/2 tsp lemon juice
1/2 cup coconut oil or non hydrogenated shortening like earth balance
1/2 cup agave or raw honey
3/4 cup coconut sugar
1 Tbsp vanilla
1 organic egg
1 1/2 cup organic quick cooking oats

Directions:
In a large mixing bowl, beat the shortening and coconut sugar until combined. In a separate bowl, whisk together the egg, agave, and vanilla. Add the egg mixture to the sugar and shortening mixture, and beat to thoroughly combine. In a third bowl, combine the almond flour, tapioca flour, cinnamon, allspice, baking soda, oats and salt. Add the flour mixture and stir until well combined. Fold in fresh blueberries, or chocolate chips, or unsweetened coconut shredded, chia seeds, sunflower seeds, dried cranberries, etc or any other of your choice.

On a baking sheet lined with parchment paper, form batter into small rectangles and place 2 inches apart. Bake 9 - 12 minutes or until lightly browned. Cool completely. Wrap individually in foil. Great for lunch boxes, on the go snacks. Store in Freezer.
