1 large eggplant
½ tsp of salt
¼ tsp of cayenne powder
¼ tsp of black pepper
¼ tsp of turmeric powder

2 eggs
bread crumbs
Fresh basil
Italian Seasonings
¼ tsp garlic powder
Oil for shallow frying

Masala sauce
2 tsp of olive oil
½ onion chopped
2 tbsp. of tomato paste
½ tsp of garlic paste
1 tbsp. chopped cilantro
¼ tsp of turmeric powder
1 tsp of lemon juice
½ tsp of salt
½ tsp of cayenne powder

Directions:
Directions:
1.Combine salt, cayenne powder, black pepper.
2.Slice the eggplant into ¼ inch thick slices
3 Rub the eggplant slices with the salt mixture and keep it on the side to marinate for about 10 mins.
4 Whisk 2 eggs in a separate bowl.
5.Heat olive oil in a frying pan.
6. Combine breadcrumbs, Italian seasonings, garlic powder in a large bowl.
7. Dip a slice of the eggplant in the egg mixture and then in the bread crumbs and fry until golden brown. Keep a paper towel on a plate to remove excess oil.

Tomato Paste mixture
1. Fry the onions in olive oil.
2. Add tomato paste, garlic paste, turmeric powder, lemon juice, salt and cayenne powder.
3 Cook on low heat for about 15 mins.
4. If the sauce is too thick add about 1 tbsp. of water.
5. Add cilantro at the end.

When serving add the tomato paste mixture on top of the fried eggplant and garnish with basil leaves..

This dish goes well with Daal and Rice.
