5 lb. tomatoes (full ice cream bucket)
3 large onions
3 green peppers
2 Tbls. canning salt
1 tsp. pepper
½ cup vinegar
1 tbls. minced garlic

Directions:
Directions:
Blanche tomatoes and remove skins. Cut into chunks and add to stew pot. Using a food processor, chop onions and peppers into small pieces. Add remaining ingredients.

Sterilize jars. Fill to within 1/4 inch from top. Check lip of jar for food and nicks by running finger around rim. Put lid onto jars tightly. Process in boiling water bath 30 minutes for pints and 40 minutes for quarts. Remove from water bath and allow to cool before checking for seal. Refrigerate any jars that have not sealed and use immediately.
