½ lb. bacalao filet
¾ cup flour
½ tsp. baking powder
⅓ tsp. salt
¾ cup bacalao broth or water
1 tsp. black pepper
2 tsp. crushed garlic
oil for frying

If you can find Goya Bacalao Mix you can use it instead
to make the batter and a smaller portion of the ingredients
above to increase amount.

Rinse the bacalao and boil in water for 20 min.
Discard water and boil in water again to remove
most of the salt.
In a bowl, combine the flour, baking powder, salt,
pepper and garlic. Add the broth and whisk. The mixture
should look like pancake batter. Add the flaked
bacalao.
Spoon the batter by ½ cup fulls into hot oil.
Fry over high heat and turn over only once.
Remove when golden on both sides and drain
on paper towels.
This recipe will make about 10 bacalaitos.
