5 lbs. of Idaho or Russet potatoes
1 dozen eggs
1 medium onion; finely chopped
1/2 green pepper; finely chopped
salt & pepper to taste
Hellman's mayonnaise

Directions:
Directions:
Peel potatoes and cut into 1" cubes. Put into large pot and cover with water. Bring to a boil and cook until just tender; about 15 - 20 minutes. Pour out water and rinse with cold water. Drain well and put into large bowl.

Boil 1 dozen eggs until hard boiled; about 10 minutes. Cool. Remove shells and slice. Add to potatoes with onions, peppers, salt and pepper. Add mayonnaise and mix well. Add more mayo as needed until moist.
