1 lb salt cod, pieces or boned
2 lbs potatoes
½ lb salt pork (sliced)
1 lg onion (med chopped)

Directions:
Directions:
Soak salt cod in cold water overnight (approx 6-8 hours). Drain and replace with cold water. In med-size pot, bring potatoes to slow boil and simmer for 20 minutes. Add fish and cook until tender (approx 15-20 minutes).

While cod is cooking; in a skillet, med heat, fry salt pork until all fat is extracted. Remove salt pork and add onions. Cook onions until golden brown and remove from heat. Spoon onions and pork fat over fish and potatoes. Garnish with rendered fried pork.
