1 cup whole milk
½ cup vegetable oil
1 tsp salt
2 cups (10 oz) tapioca flour or sour cassava flour
2 eggs
1 – 1 ½ cups Parmesan cheese

Directions:
Directions:
1) Preheat oven to 450°F. Line a baking sheet with parchment.
2) Combine the milk, oil and salt in a saucepan, and whisking occasionally, bring it to a gentle boil over medium heat. Remove from heat as soon as big bubbles come through the milk.
3) Add tapioca flour to the saucepan and stir until you see no dry flour. The dough will be grainy and gelatinous at this point.
4) Transfer dough to a standing mixer bowl fitted with a paddle attachment. Beat for a few minutes at medium speed until smooth and cooled enough to hold your finger against the bowl for a few seconds.
5) Whisk the eggs together in a small bowl. With mixer on medium, beat the eggs into the dough in two additions. Wait until the first is fully incorporated before adding the second.
6) With the mixer on medium, beat in the cheese until fully incorporated. Dough will be sticky, stretchy and soft.
7) Using an ice cream scoop or tablespoon, place rounded portions on a parchment-lined baking sheet. Space an inch apart.
8) Place the baking sheet into the oven and immediately reduce the temperature to 350°F. Bake for 25-30 minuites until puffy and starting to color. Cool briefly and eat.
