CAKE

2 c sugar
1 1/2 c vegetable oil
4 eggs
2 c flour
2 t soda
1 1/2 t cinnamon
1 t. salt
3 c. grated carrots
1 t vanilla

FROSTING

3/4 large package cream cheese
1/2 stick butter (soft)
1 Box powdered sugar (or so)

Directions:
Directions:
Beat together:
2 c. sugar
1 ½ c. vegetable oil
Then add:
4 eggs
Beat until well mixed.
Sift together:
2 c. flour
2 t. soda
1 ½ t. cinnamon
1 t. salt

Mix sifted ingredients into sugar and oil mixture.
Add:
3 c. grated carrots and 1 t. vanilla

Pour into greased and floured pan, bake 1 hr, 15 or 20 minutes @ 300 degrees.

FROSTING
Beat until smooth and spread on cool cake:
3/4 large package cream cheese
½ stick margarine (soft)
1 BOX. powdered sugar (or so)
